There are two logos. One for fresh pork, and one for processed pork. The Other White Meat logo is to be used only for fresh pork. The Pork logo is to be used only for processed pork.
How are fresh pork and processed pork defined?
Fresh Pork:The Other White Meat logo will be used to identify only pork products that meet the following qualifications:
- Come from the butt, picnic, loin, rib or leg
- May be pumped (with minimal solution to promote tenderness, juiciness and flavor)
- May be pre-seasoned, pre-marinated or pre-cooked
- Have not been cured, smoked or processed
Processed Pork: The Pork logo will be used to identify only processed pork products that meet the following qualifications:
- May be pumped (with minimal solution to promote tenderness, juiciness and flavor
- May be pre-seasoned, pre-marinated or pre-cooked
- Have been cured, smoked or processed
