Know the Fresh Pork Cuts to Promote for the Holidays

While turkeys tend to steal the spotlight at Thanksgiving, there are a number of fresh pork cuts that merit attention on all the other days of the holiday season. Stock your meat case with these sought-after cuts, as indicated by 2010 Q4 sales data, to entice customers to select more fresh pork:   
  • Boneless chops were the top-selling fresh pork cut during the fourth quarter of 2010, so have plenty on hand to take advantage of consumer demand for this “no brainer” center-of-the-plate option.

  • Shoulder bone-in blade roasts were also popular during the holidays last year; offer them to appeal to Hispanic customers who like to make tamales for traditional holiday festivities.

  • Cash in on the popularity of year-round grilling by stocking an ample supply of spareribs, back ribs, and country style ribs, all top sellers during 2010’s fourth quarter and great choices for the grill. Pork steak, another grilling favorite, also made last year’s holiday Top 10 list.
